Félix Kir mayor of Dijon in Burgundy is generally credited with popularising Kir in the post war period mixing blackcurrant with still white wine and offering it at receptions to visiting delegations... if you were especially important though the white wine would be replaced by Champagne - very simple and quite delicious - we go a little further and give the choice of the usual blackcurrant with crème de cassis, or peach with crème de pêche or even raspberry with crème de framboise.
